*Ingredients:*
– Flour – 2kg
– Sugar – 350g (if you like it very sweet, use 400g)
– Margarine / Butter – 300g (Simas is best for that milky taste)
– Milk – 150g (Powdered milk like Loyal or Peak)
– Nutmeg – 2 tablespoons (grated)
– Baking Powder – 1 level teaspoon (Don’t put too much or it will soak oil)
– Eggs – 3 medium
– Water – 300ml (use cold water)
– Vegetable Oil – For frying
– A pinch of salt

*My Secret for Extra Crunch:*
Add 2 tablespoons of cornflour and 2 tablespoons of powdered milk extra. It gives it that rich, milky crunch people pay extra for.

Step-by-Step Method

*STEP 1: Mix Dry Ingredients*
In a big bowl, sieve your flour, add sugar, milk, nutmeg, salt, baking powder and cornflour. Mix well.

*STEP 2: Add Butter*
Add your margarine and rub it into the flour with your fingers until it looks like breadcrumbs. This is what makes it crunchy and not hard.

*STEP 3: Add Eggs & Water*
Whisk your eggs and add it. Then gradually add your cold water. Mix until you have a hard dough, not soft. If your dough is soft, your chin chin will soak oil. The dough should be firm.

*STEP 4: Rest and Cut*
Let the dough rest for 15-20 minutes. Then roll it out flat on a board, not too thin, not too thick. Cut into your desired shape. For business, small cubes sell faster.

*STEP 5: Fry Right*
Heat your groundnut oil on medium heat. Don’t fry on low heat or it will soak oil. Don’t fry on very high heat or it will burn outside and be raw inside. Fry in batches, stir constantly until golden brown. Bring it out and spread on sieve, NOT on newspaper.
